Tijuana, a hotspot of Baja Med fusion cuisine

Tijuana has been getting a lot of attention lately in the gastronomic area. The gastronomy of this border city is a mixture of aromas, textures and flavors that is putting the name of the city very high.

One of the main characteristics of Tijuana, is the large number of migrants from different nationalities who made of this friendly city their home. So local chefs have opted to merge mexican recipes with recipes from the rest of the world, resulting in unique dishes that delight even the most demanding palates.

BajaMed cuisine is a trend that is being recognized inside and outside of Mexico. This culinary style is influenced by Mexican, Mediterranean and Oriental cuisine. Its main feature are the fresh ingredients harvested in Baja California.

The creation of this gastronomic concept is attributed to chef Miguel Angel Guerrero, who applies it in his restaurant “La Querencia”. A place that combines oriental and Mediterranean cuisine with ingredients from the land and the regional sea, in addition to the mixture of mexican flavors and spices as we mentioned before.

Famous Chef Javier Plascencia has developed his version of Baja Med in his restaurant “Mission 19”, a place that prides itself on not using frozen products.

The ingredients used in this restaurant are intended to be local, seasonal and of course produced in Mexico. So the dishes are subject to their availability.
